Kale salad… No, really it’s awesome


I like kale, but I realize I’m weird. This stuff, however has turned non kale eaters into believers.

1 bunch of kale
1 lemon
1 garlic clove
Parmesan cheese
Salt and pepper
Good olive oil

Wash, dry and rip your kale into pieces then pour on the good stuff. I mean good olive oil. The kind you’d dip bread in, or… Well… Make salad with.

Massage that stuff into the kale. Yes, I said massage. And no it’s not some foodie freakish thing. It works. Trust me on this.

Add the zest of your lemon and the juice from half the lemon. Mash or grate that garlic clove and add it. Add finely slivered onions – any kind but I like red or green, about 1/2 a small onion works. Salt and pepper to taste then toss in as much, or as little grated (fresh please!) Parmesan cheese as you’d like.

Serve and prepare to be amazed. And yes, it keeps well.
